An intriguingly light and playful meal – just right for a slow appetite! This requires an oven, so save the earth … and double or quadruple the recipe. That way you’d serve the whole family while being correctly green with electricity usage!

Fuzzy Egg Nests
Kids love this!


  • 1 Nulaid egg, separated *
  • 30 ml grated cheese
  • 15 ml very finely diced tomato

Chef's hint: The male adults in your life may not go for this tower of fluff, but your BFFs may! And you can even improve the zing quotient by adding to the beaten egg white finely chopped chives and dill and a small handful of finely grated Parmesan before you create the towers. The grown-up girls will love it!


Beat the Nulaid egg white until stiff. Pile onto a baking sheet that you’ve lined with baking paper and with the back of a small spoon, make a hollow into the centre into which the egg yolk will fit.

Bake in the oven preheated to 180 ºC for 15 minutes. Remove from oven and slide the Nulaid egg yolk into the cavity. Combine the cheese and tomato and sprinkle over the yolk only.

Return to the oven and bake for a further 6 minutes or so until the yolk is cooked to your liking. Serve at once.
